I teach a one day knife and blade sharpening course and in all of my classes, I discover the same or similar stories. People can’t seem to get their knife sharp no matter what technique they try or how long they work. Their knife edge doesn’t take an edge or keep an edge. For men, they resort to brute hand strength to cut or slice anything. Women become frustrated and just have their kitchen knives professionally sharpened for too much money.
How would you like to draw your knife from your pocket, sheath, or block and know beyond any shadow of a doubt that your knife is ready to cut, slice, dice, or trim? No forcing or frustration. Just pure cutting action. Simple. Your knife is sharp. Every time. When you call on your knife it responds with the smooth buttery cutting.
It has taken me years of practice, hours of study and plenty of hard work to be able to sharpen knives beyond razor sharp. I have sought out professional advice. I have paid thousands of dollars learning how to hone my blades to beyond razor sharp. Now I know how to sharpen everything. I can take a lump of lifeless steel and sharpen it to perfection. I routinely sharpen knives to split a human hair three ways. If you can think of a knife sharpness test my sharpening skills will pass it.

Most people struggle to sharpen their knives for a few simple reasons. We will talk in detail about those reasons in a later chapter. Nearly every novice blade sharpener makes one or all of these five mistakes.

No matter what class I teach the story is always the same. The excited knife sharpener sets out to sharpen their knife unknowingly making one of the above five mistakes and they become discouraged and give up. Before too long they find another get-sharp-quick technique on the internet and fail again because they are still making the same mistakes. Finally, in desperation, they purchase an expensive knife sharpening system only to fall frustratingly short of establishing a sharp edge on their knife and keeping it there.
That is where I enter the class and teach them the skills they need to overcome those mistakes. Then I teach them the fundamentals of sharpening a knife. Lastly, I show them how to take it a step further than they ever dreamed possible. I can easily teach anyone who wants to learn how to sharpen their knife beyond razor sharp.
Once you have a sharp knife, you will no longer be reliant on a pre-packaged perforated plastic packaging. Precut and deboned meat are crutches for dull knives. You won’t have to hack twine, rope, or line until it grudgingly parts. Vegetables will be sliced and diced instead of being smashed and torn. Let’s get those knives beyond razor sharp today!

I like that he carefully explains why you’re doing each step and that he explains how to use a marking pen to see how you’re doing. A lot of sharpening instructors simply tell you to use a marker without showing you what to look for. I have a horrible history of turning great knives into butter knives. I watched every video I could think of and although they helped me with the basics, the technique just wouldn’t come.
