I teach a one day knife and blade sharpening course and in all of my classes, I discover the same or similar stories. People can’t seem to get their knife sharp no matter what technique they try or how long they work. Their knife edge doesn’t take an edge or keep an edge. I get asked all the time what the proper angle to sharpen a knife is. There is no one perfect angle for all applications, just like a mechanic doesn’t use a one-size-fits-all wrench to work on your car. Anyone with experience with knives, axes, and other tools sharpen each tool based on several different factors. If I was going to go with a one-size-fits-all approach to sharpening I would recommend you starting around 22 degrees (most knives are sharpened on both sides so that is a overall 44 degree edge). This is a good starting point that has been recommended for years.
I am looking at putting on a sharpening class near Buena Vista, CO July 16-17. This is going to be a great opportunity for a small group of people who want to get away for a weekend! There is only going to be room for 8-10 people and some of those spots may already be filled. Stakeholders will have first priority to openings. This is just a tentative schedule, times and subjects may be changed if needed.
